¼   Cup Olive Oil

1    Sweet Onion (Medium Dice)

1    Red Bell Pepper (Medium Dice)

1    Green Bell Pepper (Medium Dice)

1    Pound Roma Tomatoes (Medium Dice)

1.5 Pounds Ground Beef (85% Lean)

1    Pound Dark Red Kidney Beans (Canned & Strained)

1    Pound Chorizo (Casing Removed & Thinly Sliced) *Optional

1    Cup Tomato Paste

2    Cups Water

1.5 Cups of Campside Chef Gourmet Spice Blend (Favorite Blend)


Step #1  Add ground beef to pan and cook thoroughly over medium heat.  Remove ground beef and strain out excess oil & water.  Set aside.

Step #2  Add olive oil, onions, and peppers to pan and cook over medium heat.  Cook until onions & peppers are slightly browned.  Add ground beef back into pan.


Step #3  Add the tomatoes, tomato paste, water, chorizo, beans, and seasoning.  Mix thoroughly.


Step #4 Stir the chili occasionally and cook it for an additional 45-60 minutes on low heat.   Serve & enjoy.
