3     Pounds Chicken

1     Cup Canola Oil


1     Quart Buttermilk

¼    Cup Citrus Pepper Blend


Flour Mix


2      Cups All-Purpose Flour

¼     Cup Citrus Pepper Blend


Step #1  Prepare the marinade by adding & mixing the buttermilk and  Citrus Pepper Blend together in a container.  Add the chicken to the container.  Refrigerate covered container for 24 hours.


Step #2  Prepare flour mixture in stainless steel bowl by adding flour & Citrus Pepper Blend and mixing well.  Add oil to large fry pan and turn stove to medium. 


Step #3  Remove the chicken from the marinade and set aside. 


Step #4  Add the pieces of chicken to the flour mixture in the bowl one at a time.  Shake & coat all sides of the chicken.   


Step #5  Add the floured chicken to the oil when the oil is hot.  Fry until lightly golden brown on each side.


Step #6  Place partially fried chicken on a baking sheet and bake in preheated oven @350°F until the internal temperature of the chicken reaches 165°F.  Approximately 45 minutes.  Serve & enjoy.
